Far more is done on a coffee plantation than just growing coffee trees and harvesting the fruit. In order to ensure a high quality harvest, the cherries must be gathered using the best possible technique.
When coffee cherries ripen, they must be picked almost immediately not an easy thing to time when a single tree's fruit is in various stages of maturity simultaneously. Indeed, one may expect to find unripe, green and ripe, red cherries on the same branch. As a result, the less ripe and over ripe cherries must be sorted or the quality of the harvest will suffer.
The cherries can be harvested using a variety of techniques. The two most common are:
– Handpicking
– Strip-picking
